How to Make Chicken Pizza Pinwheels (What to Expect)
This recipe is built in three layers and each one matters.
You'll start by making the dough, which needs time to rise so plan accordingly. While it rests, you'll cook down the chicken filling with aromatics, sauce, and a touch of sweetness from corn that balances the tomato base beautifully.
Once your dough is ready and your filling is cool enough to handle, you'll roll everything out, layer the filling and cheese, then roll it up tightly and slice into pinwheels. They go into a hot oven and come out golden, fluffy, and packed with flavor.
The result is a savory baked pinwheel with a soft interior, cheesy pull, and a filling that stays in place.

Key Tips Before You Start
Don't skip the sparkling water. It's what gives this dough that soft, bakery-style texture. The carbonation creates tiny air pockets and keeps the crumb light and fluffy.
- Cook your filling all the way down. You want the sauce to thicken before it goes onto the dough. Wet filling = soggy pinwheels.
- Let the dough rise fully. Give it a full hour in a warm spot. Rushing the rise makes the pinwheels dense instead of fluffy.
- Roll tightly and seal the edge. Use a small brush of oil along the seam to keep everything together when you slice and bake.
Substitutions and Variations
- Seasoning Substitutes: Creole seasoning adds a nice kick, but Italian seasoning , garlic powder, onion powder, oregano, or basil work great too. Customize the spice level with chili flakes or skip them altogether for a milder taste.
Storage & Reheating
- Let the pinwheels cool completely before storing them in an airtight container or zip-top bag. They will stay fresh in the refrigerator for up to 4 days. For longer storage, freeze the cooled pinwheels in a single layer for 1 to 2 hours, then transfer them to a freezer-safe bag or container for up to 2 months.
- To reheat, warm them in the oven or toaster oven at 350°F for 5 to 10 minutes, in the air fryer at 350°F for 2 to 3 minutes from the fridge or 5 to 6 minutes from frozen, or microwave for 20 to 30 seconds for a quick option.

By Tiffany Boakye-KorsahIngredients
For the Dough (Homemade Pizza Dough)
- - 2 1/8 teaspoons active dry yeast (one packet plus a little extra)
- - 1 cup sparkling water, room temperature (makes the dough extra soft)
- - 2 large eggs
- - 1/2 teaspoon salt
- - 4 tablespoons of sugar
- - 10 tablespoons of unsalted butter
- - 4 cups all-purpose flour
- - 1 tablespoon shortening for extra tenderness; can substitute with butter
For the Chicken Pizza Filling
- - 1 pound ground chicken
- - 2 tablespoons oil (for sautéing)
- - 1/2 medium onion, finely chopped
- - 2 cloves garlic, minced
- - 1/2 teaspoon Creole seasoning
- - 1/2 teaspoon paprika
- - 1/4 teaspoon red pepper flakes
- - 1/2 teaspoon salt and 1/4 teaspoon black pepper (or to taste)
- - 1/2 teaspoon sugar (balances acidity in the tomato sauce)
- - 1/2 large carrot, finely shredded or minced
- - 1/2 teaspoon fresh parsley, chopped
- - 8 ounces of tomato sauce (about 1 cup)
- - 1/2 teaspoon BBQ sauce
- - 1/2 teaspoon butter
- - 1/4 cup corn kernels (fresh or frozen, for a pop of sweetness and texture)
- - 1/2 cup Parmesan cheese, grated (or substitute with mozzarella or cheddar)
Instructions
Prepare the Dough: Add the yeast and sparkling water to a bowl and let sit for 1 minute. Mix in the eggs, sugar, salt, melted butter, and shortening. Slowly add the flour until a soft dough forms. Knead for 5 to 7 minutes, then cover and let rise in a warm place for 1 hour.
Make the Chicken Filling: Heat oil in a pan over medium heat. Sauté the onion and garlic for 2 minutes. Add the ground chicken and break it apart with a spoon. Season with Creole seasoning, paprika, red pepper flakes, salt, black pepper, and sugar, then cook for 10 to 15 minutes. Stir in the carrot and parsley and cook for 2 minutes. Add the tomato sauce and BBQ sauce and simmer for 15 minutes. Finish with the butter and corn, simmer for 2 more minutes, then remove from heat.
Assemble the Pinwheels: Preheat the oven to 450°F. Roll the dough out on a floured surface into a large rectangle about 1/2 inch thick. Spread the chicken filling evenly over the dough and top with Parmesan cheese. Roll tightly into a log, seal the edge with a little oil, then slice into pinwheels and place on a greased baking sheet.
Bake: Bake for 15 to 18 minutes, or until golden brown. Remove from the oven and sprinkle extra cheese on top while warm. Allow to cool slightly before serving.
