      Ingredients

      Lamb

      • - 5 lamb loin chops (about 1 inch thick

      Seasonings

      • - 1 teaspoon garlic salt
      • - 1 teaspoon onion powder
      • - 1 teaspoon garlic powder
      • - ½ teaspoon masala

      Marinade

      • - 1 tablespoon ghee, melted
      • - 2 tablespoons plain Greek yogurt
      • - 4 tablespoons homemade chimichurri sauce, divided
      • - 1 tablespoon olive oil

      Instructions

      Season the Lamb: Pat the lamb loin chops dry with paper towels. In a large bowl, combine the garlic salt, onion powder, garlic powder, masala, melted ghee, Greek yogurt, and 2 tablespoons of the homemade chimichurri sauce. Add the lamb chops and coat them evenly on all sides.

      Marinate: Cover and refrigerate for at least 30 minutes or up to overnight for the best flavor. Before cooking, let the lamb sit at room temperature for 20–30 minutes.

      Air Fry: Preheat the air fryer to 400°F (200°C). Arrange the lamb chops in a single layer in the air fryer basket, leaving a little space between each chop. Brush or lightly drizzle the chops with 1 tablespoon olive oil. Air fry for 8–12 minutes, flipping halfway through cooking. - Medium-rare: 8–9 minutes (130–135°F), - Medium: 10–11 minutes (140–145°F), - Well-done: 12 minutes (160°F+)

      Rest: Transfer the lamb chops to a plate and let them rest for 5 minutes before serving.

      Serve: Drizzle the lamb chops with the remaining 2 tablespoons homemade chimichurri sauce and serve with mashed sweet potatoes, roasted vegetables, mashed potatoes, rice, or a fresh salad.
