Ingredients

GARLIC HERB BUTTER ( COMPOUND BUTTER):

  • - 12 cloves of garlic, peeled
  • - 1 tbsp olive oil
  • - 2 sticks of unsalted butter, softened
  • - 1 cup of fresh Parsley, finely chopped
  • - 2 sprigs of fresh rosemary, (removed from stems and finely chopped)
  • - 6 sprigs of fresh thyme leaves, (removed from stems and finely chopped)

GARLIC HERB MASHED POTATOES:

  • - 4 large Russet potatoes, peeled and cut into chunks
  • - 1 tbsp of compound butter
  • - 1 tbsp unsalted butter
  • - ½ cup heavy cream, warmed
  • - Salt, to taste

SALMON + SHRIMP:

  • - 2 salmon fillets (skin-on or skinless)
  • - 6 jumbo shrimp, peeled and de-veined
  • - 2 tbsp olive oil
  • -Blackened seasoning
  • -Creole seasoning
  • - ¼ tsp black pepper
  • - 1 tbsp unsalted butter (for salmon)
  • - 1 tsp fresh lemon juice (for salmon, divided)
  • - 1 tbsp garlic herb butter (for shrimp)
  • - ¼ teaspoon crushed red pepper flakes

SPINACH:

  • - 2 cups of fresh spinach (about 2 large handfuls)
  • - 1 tsp olive oil
  • - Salt & black pepper, to taste

GARLIC HERB SAUCE:

  • - 2 tbsp homemade garlic herb butter
  • - ¼ cup dry white wine (such as Sauvignon Blanc or Pinot Grigio)
  • - ¼ teaspoon crushed red pepper flakes
  • - ¼ tsp fresh lemon juice
  • - Salt to taste

GARNISH

  • - fresh parsley

Instructions

Garlic Herb Compound Butter (Flavor Base ):Preheat the oven or air fryer to 375°F (190°C). Add the garlic cloves to a small baking dish, drizzle with olive oil, and roast for about 15 minutes until soft and fragrant. Mash the roasted garlic and set aside. Mix with softened butter, parsley, rosemary, and thyme until smooth. Optional: roll into a log and refrigerate until firm (at least 30 minutes).

Creamy Garlic Herb Mashed Potatoes: Bring a pot of salted water to a boil, add peeled chopped potatoes, and cook for 15–20 minutes until tender. Drain and mash until smooth, then mix in garlic herb butter, unsalted butter, heavy cream, and salt (if needed). Mash the potatoes until smooth, creamy, and fluffy. Cover and keep warm.

Blackened Salmon (Air Fryer): Preheat air fryer to 390°F (198°C). Pat salmon dry, season with blackened seasoning, creole seasoning, black pepper and olive oil. Top each fillet with ½ tablespoon of butter, then finish with a squeeze of fresh lemon juice. Air fry for 7–10 minutes until flaky.

Garlic Butter Shrimp: Pat the shrimp dry, then season with blackened seasoning, Creole seasoning, and black pepper. Add 1 tablespoon of garlic herb butter and crushed red pepper flakes to a pan over medium-high heat. Once melted, cook the shrimp for 1½–2 minutes per side, until pink and opaque.

Sautéed Spinach: Heat oil over medium heat, add spinach, and sauté for 2–3 minutes until wilted. Season with salt and black pepper to taste.

Garlic Herb Sauce: Melt 2 tbsp garlic herb butter over medium heat, add white wine and red pepper flakes, and simmer for 2–3 minutes until slightly reduced. Finish with lemon juice and salt, then drizzle over salmon and shrimp.

Assemble the Plate: Spoon the mashed potatoes onto the plate, add the spinach on the side, then layer the salmon over the potatoes and top with shrimp. Drizzle with the garlic herb sauce and garnish with parsley if desired.
