- - 2 tbsp butter, softened
- - ½ small onion, finely grated (or 2 tsp onion powder, though fresh onion is best)
- - 1 tbsp freshly grated garlic (about 4–5 cloves)
- - 1 tbsp freshly grated ginger
- - 2 tbsp Creole seasoning
- - 2 tsp paprika
- - 1 tsp ground cumin
- - 1 tsp ground coriander
- - 1 tsp dried oregano
- - 1 tsp dried thyme
- - 1 tsp celery flakes or celery seed
- - ½ tsp red pepper flakes, or to taste
- - 1 tsp kosher or coarse salt
- - 1 tsp black pepper
For the Vegetables
- - 3 carrots, peeled and cut into large chunks or sticks
- - 4 ears corn, each cob cut into approximately 2-inch pieces

Preheat the Oven: Preheat the oven to 390°F (200°C). Prepare a large roasting pan with a roasting rack that can sit securely over the vegetables.
Clean and Prep the Chicken: Trim away any excess fat from the chicken. Rub the chicken thoroughly with the halved lime or lemon, then rinse with water and white vinegar according to your preferred cleaning method.
Pat the chicken completely dry with paper towels. Removing the excess moisture is important because it helps the seasoning adhere to the chicken and encourages the skin to become beautifully browned and crisp while roasting.
Spatchcock the Chicken: Place the chicken breast-side down on a sturdy cutting board. Using kitchen shears or a sharp knife, cut along both sides of the backbone and remove it. Flip the chicken over so the breast is facing upward. Press firmly on the center of the breastbone until the chicken lies relatively flat. Tuck the wing tips underneath the chicken to help prevent them from burning.

Cut the 3 tablespoons of butter into small pieces and scatter them throughout the vegetables. As everything roasts, the butter will melt into the vegetables and seasoned liquid.
Make the Seasoned Roasting Liquid: In a bowl or large measuring cup, combine warm water, chicken bouillon powder, ground ginger, paprika, and dried oregano (if using). Stir thoroughly until the bouillon and seasonings are well incorporated. Pour the seasoned liquid into the roasting pan with the vegetables, distributing it throughout the pan.
Set Up the Chicken: Position a roasting rack directly over the vegetables and place the seasoned chicken on the rack skin-side up. This allows the chicken to roast above the vegetables while its flavorful juices drip down into the pan. Cover the entire roasting pan tightly with aluminum foil.
Roast: Transfer the pan to the preheated oven and roast at 390°F (200°C) for 40 minutes, covered. Carefully remove the pan from the oven, uncover, and use a large spatula or tongs to flip the chicken so the skin-side is facing down. Flip and stir the vegetables as well so they cook evenly, and spoon some of the flavorful liquid from the bottom of the pan over the vegetables if needed.
Return the pan to the oven uncovered and roast for an additional 15 minutes, or until the chicken is fully cooked and the vegetables are tender. The chicken is cooked through when the thickest part reaches an internal temperature of 165°F (74°C).
Broil for Crispy Skin: For an extra golden, crispy finish, place the chicken skin side up and switch the oven to broil for 3–5 minutes of cooking. Keep a close eye on the chicken during this step because the skin can go from beautifully browned to burned very quickly.
Rest: Carefully remove the chicken from the oven and let it rest for approximately 10 minutes before carving. Resting allows the juices to redistribute throughout the meat, helping the chicken remain tender and juicy.
