Why You’ll Love This Recipe
- Rich, comforting flavor — butter, garlic, and juicy shrimp in every bite.
- Quick and easy — comes together fast with no advanced skills needed.
- Perfectly balanced — bold garlic, smooth butter, tender shrimp, nothing too heavy.
-
Great for any occasion — impressive enough for guests, simple enough for weeknights

Substitutions and Variations
- Protein swaps — no shrimp? Use chicken, scallops, or mushrooms for a vegetarian option. Just make sure chicken is cooked through before combining with the pasta.
- Pasta alternatives — penne, fettuccine, or spaghetti all work. Short pasta holds the sauce well; long pasta gives a different texture. Use what you have.
- Dairy-free option — swap butter for olive oil or plant-based butter and use a dairy-free cream alternative to keep it creamy.
- Add vegetables — spinach, broccoli, bell peppers, or cherry tomatoes add color, texture, and extra nutrition.
Serving Suggestions
- Serve with a light salad — a simple green salad balances the rich, buttery sauce perfectly.
- Add crusty bread — garlic bread or a baguette is great for soaking up that extra sauce.
- Garnish before serving — fresh parsley, grated cheese, or a squeeze of lemon adds a nice finishing touch.
-
Serve immediately — best enjoyed hot and fresh while the sauce is still creamy and the shrimp is tender.

Tips / Notes for Best Results
- Don't overcook the shrimp — as soon as they turn pink and firm, pull them off the heat. Overcooked shrimp turns rubbery fast.
- Use fresh garlic and real butter — it makes a difference. Fresh garlic gives a stronger, more natural flavor that elevates the whole dish.
- Cook pasta al dente — slightly firm is what you want. It holds up better once mixed into the sauce.
- Taste the sauce first — before combining everything, adjust your salt, pepper, and seasoning so every bite is balanced and flavorful..
Frequently Asked Questions
1. What makes Garlic Butter Shrimp Rigatoni so flavorful?
Garlic Butter Shrimp Rigatoni gets its rich and delicious taste from the combination of butter, garlic, and shrimp. The butter adds a smooth and creamy base, while garlic gives a warm and aromatic flavor. The shrimp brings a natural sweetness and seafood taste that blends perfectly with the pasta. When all these elements are combined, they create a balanced dish that is both comforting and full of flavor.
2. How do I cook shrimp so it stays tender and not rubbery?
Shrimp cooks very quickly, so it is important not to overcook it. You should cook shrimp just until it turns pink and opaque. This usually takes only a few minutes on medium heat. Overcooking shrimp will make it tough and rubbery, so it is best to remove it from the heat as soon as it is fully cooked. Adding shrimp toward the end of cooking helps keep it soft and juicy.
3. Can I use a different type of pasta instead of rigatoni?
Yes, you can use other types of pasta if rigatoni is not available. Pasta shapes like penne, ziti, or fusilli work well because they hold the sauce nicely. However, rigatoni is preferred because its large tubes capture the garlic butter sauce and pieces of shrimp, making every bite more flavorful and satisfying.
4. How can I make the sauce richer and more balanced?
To make the sauce richer, you can adjust the amount of butter and add a small amount of pasta water while mixing. The starchy pasta water helps the sauce become smooth and cling better to the pasta. You can also taste the sauce and adjust seasoning as needed. A touch of lemon juice or herbs can help balance the richness by adding a light, fresh flavor to the dish.

Garlic Butter Shrimp Rigatoni
By Tiffany Boakye-KorsahIngredients
- - 10 oz rigatoni pasta
- - 1/3 cup pasta water (reserved)
- - 3 tbsp unsalted butter, divided
- - 10 jumbo shrimp, peeled and deveined
- - 2 tbsp olive oil
- - 10 cherry tomatoes, halved
- - ½ onion (about ¼ cup), thinly sliced
- - 8 cloves garlic, minced
- - ¼ tsp red pepper flakes
- - ½ cup dry white wine (like Sauvignon Blanc)
- - ½ tsp oregano, adjust to taste
- - ½ tsp creole seasoning, adjust to taste
- - Fresh parsley, chopped (for garnish)
- - Salt & black pepper, to taste
Instructions
Cook the Pasta: Bring a large pot of salted water to a boil. Cook the rigatoni according to the package directions until al dente. Reserve ⅓ cup of pasta water, then drain the pasta and set aside.
Cook the Shrimp: Season the shrimp with salt and black pepper. Heat 1 tablespoon of butter in a large skillet over medium-high heat. Add the shrimp and cook for 1–2 minutes per side, or until pink and lightly golden. Remove the shrimp from the skillet and set aside.
Cook the Aromatics: In the same skillet, add the olive oil and 1 tablespoon of butter. Once melted, add the cherry tomatoes, sliced onion, minced garlic, and red pepper flakes. Cook for 3–4 minutes, stirring occasionally, until softened and fragrant.
Built the Sauce: Return the cooked shrimp to the skillet and pour in the white wine. Stir well, scraping up any browned bits from the bottom of the pan. Add the oregano and Creole seasoning and let the mixture simmer for 2–3 minutes.
Toss Everything Together: Add the cooked rigatoni and the reserved pasta water to the skillet. Toss everything together until the pasta is evenly coated in the sauce.
Finish the Dish: Stir in the remaining 1 tablespoon of butter until melted and incorporated. Taste and adjust with additional salt and black pepper as needed.
Garnish: Remove from heat and garnish with freshly chopped parsley. Serve immediately and enjoy.
