There is just something special about cooking a restaurant quality pasta dinner right at home. As someone who loves a good seafood pasta, this creamy shrimp rotini has easily become one of my go to meals when I want something that feels a little elevated but still simple to pull together.
This dish hits that perfect balance. You get juicy shrimp, tender rotini, and a rich garlic parmesan cream sauce that coats every bite. It tastes like something you would order at a restaurant, but it comes together in about 30 minutes in your own kitchen.
Whether you are cooking for a busy weeknight, a cozy date night at home, or just want a comforting bowl of pasta without overthinking it, this recipe delivers every time.
I first made this for a stay at home date night with my husband, and it quickly became a family favorite. The white wine adds depth to the sauce, the heavy cream brings that smooth, rich texture, and a touch of paprika and red pepper flakes gives just enough warmth without overpowering the dish.
As it cooks, the smell of garlic fills the kitchen, and you know it will taste amazing before the first bite.

Substitutions & Variations
One thing about this recipe, it is meant to work for you. You do not need to run to the store or overthink it. Use what you have and still get a flavorful result.
- Pasta: No rotini? No problem. Penne, fusilli, farfalle, rigatoni, or even spaghetti and linguine all work here. Just make sure you cook your pasta to al dente so it holds the sauce properly and does not get mushy.
- Shrimp: You can easily swap the shrimp for chicken breast or thighs, scallops, or salmon. This sauce is versatile, so it pairs well with different proteins. Just adjust your cooking time so everything stays tender and not overcooked.
- White Wine: If you do not cook with wine, use chicken broth or vegetable broth and add a squeeze of fresh lemon juice. That acidity helps balance the richness of the cream sauce and keeps the flavor from feeling too heavy.
- Heavy Cream: For a lighter version, use half and half. If needed, add a small cornstarch slurry to help the sauce thicken slightly. For dairy free options, coconut milk or coconut cream gives a rich texture with a subtle flavor twist. Oat cream or cashew cream are also great if you want something more neutral.
- Parmesan: No Parmesan? You can use Asiago, Grana Padano, or even a high-quality Italian cheese blend; each will melt well and give you a rich, flavorful finish.
- Spice Level: No red pepper flakes? A pinch of cayenne or a few drops of hot sauce will give you that same gentle heat.
Pro Tip for Best Results
- Always taste your sauce before adding the pasta. This is your moment to adjust salt, acidity, and spice. Once the pasta goes in, everything locks together.
Storage and Reheating
- Store leftovers in an airtight container in the refrigerator for up to 3 days.
- Reheat on the stovetop over low heat with a splash of cream, milk, or water to loosen the sauce. Avoid overheating, especially in the microwave, as shrimp can become rubbery.
Frequently Asked Questions
1. Can I make this shrimp rotini pasta without wine?
Yes. Use chicken broth or vegetable broth and add fresh lemon juice. You will still get a balanced and flavorful sauce.
2. What pasta works best for creamy shrimp pasta?
Short pasta like rotini, penne, and rigatoni works best because it holds onto the sauce. Long pasta like linguine also works if that is what you have.
3. How do I keep shrimp from overcooking?
Cook the shrimp just until pink and opaque, then remove it from the pan. Add it back at the end so it stays juicy and tender.
4, Can I make this ahead of time?
This dish is best fresh, but you can store leftovers in the fridge for up to 3 days. Reheat gently with a splash of cream or water to bring the sauce back.
5. Can I make this dairy free?
Yes. Use coconut milk, oat cream, or cashew cream instead of heavy cream, and skip the parmesan or replace it with a dairy free alternative.
