FOR THE SHRIMP:
- - 3 lbs shrimp, peeled and deveined
- - Weber Garlic Herb Seasoning, to taste
FOR THE SAUCE:
- - 4 tbsp butter, divided
- - 3 tbsp olive oil
- - 5 cloves garlic, finely chopped
- - 1 medium onion, sliced into long strips
- - 1 medium tomato, chopped
- - ¼ each green, red, and yellow bell pepper, sliced into long strips
- - ½ cup dry white wine
- - 1 tsp red pepper flakes
- - 3 sprigs fresh thyme
- - 2 bay leaves
- - Weber Cajun Seasoning, to taste
- - 1 tbsp fresh lemon juice
FOR THE PASTA:
- - ¾ lb spaghetti or fettuccine, cooked al dente and drained
TO FINISH:
- - 2 tbsp scallions, chopped
- - Fresh parsley, chopped
- - ½ lemon, for garnish
- - Extra red pepper flakes, for garnish
Instructions
Season and Sear the Shrimp: Pat shrimp dry and season generously with Weber Garlic Herb Seasoning. Heat a large sauté pan over medium heat and melt 2 tablespoons of butter. Sauté shrimp for about 3 minutes until pink and just curled. Remove immediately and set aside.
Build the Aromatic Base: In the same pan, add the remaining 2 tablespoons of butter and the olive oil. Once melted, add the garlic and onions. Sauté for about 3 minutes, stirring occasionally, until softened and fragrant.
Add the Vegetables: Add the bell peppers and chopped tomatoes to the pan. Cook for about 3 minutes until the peppers begin to soften but still hold a slight bite.
Develop the Sauce: Pour in the white wine to deglaze the pan, scraping up any flavorful bits from the bottom. Add the red pepper flakes, thyme, bay leaves, Cajun seasoning, and additional garlic herb seasoning. Stir well and cook for 5 minutes, allowing the sauce to reduce slightly. Taste and adjust seasoning as needed.
Return the Shrimp: Add the shrimp back into the pan along with the scallions and fresh lemon juice. Stir gently and allow everything to simmer together for 2 minutes so the flavors fully marry.
Toss the Pasta: Add your cooked pasta directly to the pan and toss well until every strand is coated in the sauce. Fold in the chopped parsley.
Plate and Serve: Serve immediately. Garnish each plate with a pinch of red pepper flakes, a squeeze of fresh lemon, and extra chopped parsley for color and brightness.
