Ingredients

For the Plantain Dough

  • - 2 semi-ripe plantains (about 500 g; yellow with some black spots)
  • - Salt, for boiling
  • - All-purpose or Creole seasoning, to taste
  • - Black pepper, to taste

Optional: Caribbean Fish Prep

  • - 1–2 tbsp white vinegar
  • - Cool water, for rinsing the fish

For the Fish Filling

  • - 3 cod fish fillets (about 300 g), or any flaky white fish
  • - 1 tbsp vegetable oil
  • - 1 tbsp tomato paste
  • - 1 tsp finely chopped onion (or ½ tsp onion powder)
  • - 1 tsp finely chopped celery
  • - 1 tsp chopped fresh cilantro
  • - ¼ tsp lemon juice
  • - ½ tsp finely chopped hot pepper, seeds removed (optional)
  • - ¼ tsp chicken bouillon
  • - ¼ tsp garlic salt, or to taste
  • - ¼ tsp black pepper, or to taste

For the Breading

  • - ½ cup all-purpose flour

Instructions

Prepare the Plantains: Peel the semi-ripe plantains and cut each plantain into 3 equal pieces. Place the pieces in a pot and cover with water. Add a generous pinch of salt and bring to a boil. Cook for 15–20 minutes, or until the plantains are fork-tender. Drain well, then transfer the warm plantains to a food processor and blend until smooth. Place the mashed plantains in a bowl and season with all-purpose or Creole seasoning and black pepper to taste. Mix well and let cool slightly before shaping.

Optional: Prep the Fish (Caribbean Style): If desired, gently rinse the cod fillets once with a mixture of white vinegar and cool water. Drain well.
