Ingredients

For the Chicken:

  • - 6 chicken drumsticks
  • - 1 lime or lemon, juiced
  • - ⅓ cup white vinegar
  • - water, for rinsing
  • - 1 tbsp green seasoning (homemade or store-bought)
  • - 1 tsp salt
  • - ½ tsp black pepper

For the Curry Mixture:

  • - 5 tbsp curry powder
  • - ½ tsp geera (cumin) powder
  • - ½ tsp masala powder

For the Sauce:

  • - ⅓ cup vegetable oil
  • - 6 cloves garlic, finely chopped
  • - ½ large onion, finely chopped
  • - ½ tsp hot pepper, finely chopped (scotch bonnet or habanero)
  • - 1 cup fresh spinach
  • - ½ cup coconut milk
  • - 1 ½ cup water (adjust to desired consistency)
  • - Chicken Bouillon to taste
  • - Salt and Pepper to taste
  • - Optional: 1 tbsp Parsley, garnish

Instructions

Prep the Chicken (Caribbean-Style): Place the chicken into a large bowl. Remove any hairs, loose yellow skin, or excess fat. Rub with lime or lemon juice and white vinegar to help clean and freshen the chicken, then rinse with cold water and pat dry.

Seasoning Chicken: Season the chicken with green seasoning, salt, and black pepper, rubbing well to coat each piece evenly with flavor. Add the curry mixture just before cooking.

Cook the Chicken: Heat oil and add chicken. Add garlic, onion, and pepper. Cover and cook on low for 20–25 mins. Turning the chicken halfway through to ensure even cooking.

Build the Sauce: Add the water and coconut milk, then stir in the spinach and remaining seasoning. Bring to a gentle simmer and cook for 15–20 minutes, stirring occasionally, until the sauce thickens and the flavors come together. Adjust the consistency with more water if needed.

Garnish and Serve: Remove from the heat. Garnish with parsley, if desired, then serve warm and enjoy.

This dish is a combination of cultures, taking inspiration from Indian curry whilst using Caribbean ingredients to create the perfect combination. The result is far more exciting than your traditional curry or coconut curry. The addition of spinach and coconut provides a delicious and unique taste.
