Ingredients

Fish

  • - 1 whole tilapia, cleaned and scaled
  • - ½ lemon or lime

Marinade

  • - 2 scallions, roughly chopped
  • - 1 green Scotch bonnet pepper (seeded if preferred)
  • - 1 green bell pepper, roughly chopped
  • - 1 red bell pepper, roughly chopped
  • - ½ cup celery, chopped
  • - 1-inch piece fresh ginger, peeled
  • - ¼ teaspoon curry powder
  • - ½ small onion, roughly chopped
  • - 2 cloves garlic
  • - 2 tablespoons olive oil
  • - 1 teaspoon chicken bouillon
  • - Salt and black pepper, to taste

Sautéed Vegetables

  • - 1 large purple onion, sliced
  • - ½ red bell pepper, sliced
  • - ½ green bell pepper, sliced
  • - 1 tomato, chopped
  • -2 tablespoons olive oil
  • - Chicken bouillon, to taste

For Serving

  • - 2–3 ripe plantains
  • - 1 avocado, sliced

Instructions

Clean the Fish: Remove the scales using a kitchen knife or fish scaler. Rinse the fish thoroughly with cold water and rub it inside and out with the lemon or lime juice. Pat dry with paper towels. Make 4 deep diagonal cuts on both sides of the fish to help the seasoning penetrate.

Prepare the Marinade: In a blender or food processor, combine the scallions, Scotch bonnet pepper, green bell pepper, red bell pepper, celery, ginger, curry powder, onion, garlic, olive oil, and chicken bouillon. Blend until smooth.

Reserve Marinade for Basting: Scoop 2 tablespoons of the marinade and stir it together with 1 teaspoon of olive oil. Set aside for basting during cooking.

Season the Fish: Rub the remaining marinade generously over the entire fish, making sure to work it into the slits and inside the cavity. Season lightly with salt and black pepper to taste. Marinate for at least 30 minutes, or up to 4 hours in the refrigerator for deeper flavor.
