Substitutions & Variations
- Protein substitutions: You can use turkey, beef strips, or spare ribs with this marinade. Just adjust the cooking time so your protein is fully cooked and tender.
- Sauce variations: Want some heat? A little minced scotch bonnet or chili garlic sauce works beautifully with the annatto and five spice. Finish with a drop of sesame oil for a smoky, aromatic touch.
- Annatto paste substitute: If annatto paste (achiote paste) is not available in your area, mix 1½ teaspoons ground annatto powder with 1 teaspoon neutral oil or warm water to create a quick homemade paste.
Serving Suggestions
- Serve with steamed or fried rice: The rich annatto and five spice sauce soaks beautifully into steamed jasmine rice or Caribbean-style fried rice for a satisfying, well-balanced meal.
- Add stir fried vegetables: Broccoli, snap peas, or bell peppers add great color and crunch without overpowering the bold marinade.
- Pair with noodles: Vegetable chow mein is a perfect match. The noodles soak up that sweet savory glaze and make this a complete, hearty dinner.
- Garnish before serving: Finish with sesame seeds and sliced green onions for a clean, restaurant-style look that complements the deep annatto color.
Pro Tip for Best Results
- Marinate the chicken for deep flavor: For the best taste, let the chicken sit in the marinade for at least a few hours or overnight if possible. This allows the flavors to fully absorb into the meat, making it more juicy, tender, and well seasoned from the inside out.
- Preheat the oven properly: Always make sure your oven is fully preheated before placing the chicken inside. A hot oven helps the chicken cook evenly and develop a slightly crispy, golden exterior while keeping the inside moist and tender.
Frequently Asked Questions
1. What is Oven Baked Chinese Chicken?
Oven Baked Chinese Chicken is chicken baked in a sweet, savory, and slightly tangy Chinese style sauce instead of frying, making it tasty and healthier.
2. How do I make the chicken tender and juicy in the oven?
Don’t overcook it, marinate before baking, and let it rest after cooking to keep the chicken soft, juicy, and full of flavor.
3. Can I use chicken breast instead of chicken thighs?
Both are great options. Bone-in thighs are juicier and more forgiving during baking, making them ideal for beginners. Chicken breast is leaner but dries out faster, so keep a close eye on your cook time and use a meat thermometer to avoid over-baking.
4. What type of sauce is used in Oven Baked Chinese Chicken?
It’s usually made with soy sauce, garlic, ginger, and a sweetener like honey or sugar for a rich, balanced sweet savory flavor.
5. What can I serve with Oven Baked Chinese Chicken?
It goes great with rice, noodles, or vegetables, as they soak up the sauce, and you can also serve it with a light salad.

Oven Baked Chinese Chicken Recipe
By Tiffany Boakye-KorsahIngredients
CHICKEN
- - 4 chicken leg quarters – bone-in, skin-on (leg and thigh portions).
HOMEMADE CHINESE SAUCE MARINADE:
- - 2½ tablespoons molasses
- - 2½ tablespoons soy sauce (regular or low-sodium)
- - ½ teaspoon mirin (sweet Japanese rice wine)
- - 1½ tablespoons light brown sugar
- - 2½ teaspoons annatto paste (achiote paste)
- - 1 teaspoon ground star anise
- - 1/4 teaspoon black pepper
- - 2½ teaspoons garlic powder
- - 2½ teaspoons onion powder
- - 1 tablespoon water
- - ½ teaspoon Chinese five-spice powder
- - 1½ teaspoons ground ginger
CHICKEN SEASONING:
- - ½ teaspoon salt
- - ½ teaspoon adobo seasoning (adjust to taste)
- - 6 sprigs fresh thyme
- - 1 teaspoon dried oregano (or 2 teaspoons fresh oregano leaves)
OPTIONAL GLAZE:
- - Drippings from the baked chicken (pan juices)
- - 1 teaspoon honey
- - 1 tablespoon ketchup
Instructions
Mix the Marinade: Mix all marinade ingredients in a bowl until smooth and well combined. Make sure the sugar and spices fully dissolve into a thick sauce. You are looking for a smooth, thick sauce with no lumps. The annatto will give it a deep reddish-brown color, that is exactly what you want. Pro-Tip: If you’re using large leg quarters or prefer your chicken drenched in extra sauce, simply double the ingredients for the homemade marinade.
Marinate the Chicken: Pat the chicken dry, then place it in a bag or dish. Place the chicken in a bag or deep dish. Add the salt, adobo, thyme, and oregano, then pour the marinade over the top. Coat every piece thoroughly, making sure the sauce gets into all the crevices. Coat well, cover, and marinate for at least 4 hours or overnight for best flavor.
Preheat and Prepare to Bake: Preheat oven to 375°F (190°C). Line a baking tray with foil. Place the marinated chicken on the tray, skin side up, with all the juices. Space the pieces so they are not touching so the heat reaches each piece evenly.
Bake the Chicken: Bake for 40–45 minutes then carefully flip each piece so the underside gets color and cooks evenly. Continue baking for another 20-30 minutes. Check that it reaches 165°F (74°C). Cover loosely with foil if it browns too fast. Do not wrap it tightly; you want the skin to crisp not steam.
Optional Glaze and Broil: Mix a little pan juice with honey and ketchup for a glaze. Brush it on the chicken in the last 5 minutes. Broil for 1–2 minutes for a sticky finish. Stay at the oven because it goes from perfect to burnt fast! Pull the chicken the moment it looks shiny, sticky, and deeply caramelized.
Rest and Serve: Let the chicken rest for 5 minutes before serving so it stays juicy. Serve hot with rice, noodles, or vegetables.
