Blackened Salmon & Shrimp with Garlic Herb Mash & Buttered Spinach

 

A) Blackened Salmon & Sauteed Shrimp 

Ingredients: 

Salmon:  

  • 4 salmon fillets (skin-on or skinless) 
  • 6 Jumbo Shrimp 
  • 2 tbsp olive oil  
  • Blackened seasoning 
  • Creole seasoning 
  • 1 tbsp melted butter (salmon only) 
  • 1 Tbsp Herb + Garlic + Butter mixture (shrimp only)  

Instructions:

Salmon 

  • Preheat Air Fryer – Set your air fryer to 390°F (198°C). 
  • Prepare the Salmon – Gently rinse using Lemon Juice then pat dry with paper towel. 
  • Season – Generously sprinkle blackened and creole seasoning over both sides of the salmon.  
  • Air Fry – Place the fillets skin-side down in the air fryer basket. Drizzle Olive Oil and butter over the salmon. Cook for 7-10 minutes, depending on thickness, until the salmon is flaky and reaches an internal temp of 130-140°F (medium) or 145°F (well done). 

 

Shrimp:  

  • Prepare the Shrimp– Peel and devein shrimp. Rinse with lemon juice then pat dry using a paper towel. 
  • Cook the Shrimp – Preheat a skillet on medium heat then add the Garlic + Herb Butter mixture. Place the shrimp in the skillet in a single layer. Cook each side of the shrimp for 2 minutes until they turn pink and slightly curled. 

 

B) Garlic + Herb Mashed Potatoes :

Ingredients:

Potatoes:  

  • 4 large Russet potatoes, peeled and cut into chunks 
  • ½ cup heavy cream 
  • Salt to taste 

Compound Butter 

  • 1 Bulb of Garlic, peeled 
  • 3-4 tbsp Olive oil 
  • 4 tbsp unsalted butter 
  • 1 tbsp fresh rosemary, finely chopped 
  • 1 tbsp fresh thyme leaves, finely chopped 
  • 2 tbsp fresh parsley, finely chopped 

Instructions 

1) Boil the Potatoes: 

  • Place peeled and chopped potatoes into a large pot with salt water and bring to a boil. 
  • Cook for 15-20 minutes or until fork tender. 
  1. Drain and place into a medium sized dish

2) Roast the Garlic: 

  • Air fryer Method: Place Garlic into small baking dish. Drizzle with olive oil and roast on both sides for 18-22 minutes or until golden brown and soft.  
  • Oven Method: Preheat oven to 400°F (204°C) roast for 30-40 minutes until soft and golden brown. 
  • Use a fork to remove the garlic from the oil then set it aside.  

3) Compound Butter:  

  • In a small dish/bowl mash together melted butter and roasted garlic. Then add finely chopped parsley, thyme and rosemary.

4) Mash and Mix: 

  • Mash the potatoes using a potato masher or ricer until smooth. 
  • Add 4 tbsp Herb + Garlic + Butter mixture  
  • Add heavy cream and salt to taste   
  • Mix until creamy and well incorporated. 

5) Serve & Enjoy: 

  • Drizzle butter mixture on top, if desired. 
  • Serve warm 

C) Compound Butter Sauce 

  • 3 tbsp compound butter 
  • ¼ cup white wine (dry, like Sauvignon Blanc) 
  • ½ tsp red pepper flakes (adjust to taste) 
  • ¼ tsp fresh lemon juice 

Instructions 

  • Add compound butter to small pot on medium heat 
  • Pour in the white wine, stirring gently.  
  • Add the red pepper flakes and lemon juice. 
  • Allow it to simmer for 2-3 minutes until slightly reduced.

D) Sauteed Spinach 

  • Add 1 tsp compound butter and sauté spinach on high heat. Add salt and pepper to taste. Cook for 2-3 minutes.
