For the French Toast:

  • 4 slices brioche bread (thick-cut) 
  • 2 large eggs  
  • ½ cup whole milk (or heavy cream for extra richness)  
  • 1 tbsp brown sugar  
  • 2 tsp vanilla extract  
  • 1 tsp cinnamon  
  • ½ tsp all spice  
  • ¼ tsp salt  
  • Butter for frying 

For the Berry Compote: 

  • 1 cup mixed berries (fresh or frozen)  
  • 3 tbsp sugar  
  • ½ tsp lemon juice  
  • ¼ tsp corn starch mixed with 2 tbsp water (for thickening)  
  • ¼ tsp vanilla extract 

For Garnish:  

  • Powdered sugar

Instructions

Step 1: Prepare the Berry Compote 

  1. In a small saucepan over medium heat, combine the mixed berries, sugar, and lemon juice. 
  2. Stir and let the mixture simmer for 3-5 minutes until the berries soften and release their juices. 
  3. Mix cornstarch with water and add it directly into pan with the berry mixture. 
  4. Continue stirring until the sauce thickens (about 1 minute). Remove from heat and set aside. 

Step 2: Make the French Toast Batter 

  1. In a large bowl, whisk together eggs, milk, sugar, vanilla extract, cinnamon, allspice, and salt until fully combined. 
  2. Dip each brioche slice into the batter, making sure both sides are coated. For that rich “egg custard” flavor in every bite, let the bread soak for about 30 seconds per side. 

Step 3: Cook the Brioche French Toast 

  1. Heat a skillet or griddle over medium heat and melt butter. 
  2. Add the soaked brioche slices and cook for 2-3 minutes per side until golden brown and cooked through. 
  3. Repeat with the remaining slices, adding more butter as needed. 

Step 4: Assemble and Serve 

  1. Stack the warm brioche French toast on a serving plate. 
  2. Spoon the berry compote generously over the top.
