Ingredients
Tilapia:
- 4–6 Tilapia Fillet
- ½ cup (1 stick) unsalted butter
- 1–2 lemon (s)
- Rosemary
- Parsley
- Thyme
- 1/3 cup olive oil
- 4 cloves of garlic
- Creole Seasoning to taste
- Salt and pepper to taste
Salsa Salad:
- Cilantro
- ½ Red Bell peppers
- ½ Yellow Bell Peppers
- 1 large tomato
- Red onion
- 1 tsp red wine vinegar
- Salt to taste
Mashed Potatoes:
- 3 pounds potatoes, peeled and cubed
- 3 tbsp unsalted butter
- Salt to taste
- ¼ cup heavy cream (**A little trick I love to do is mix about 3 tbsp of Nido or Klim powdered milk with about ¼ cup or less of cool water to make a thick cream. This is a great substitute for heavy cream)
Instructions
Tilapia:
- Preheat oven to 350 degrees Fahrenheit.
- Clean Tilapia, then pat dry. Season with salt and pepper on both sides. Set aside by placing it into a baking dish.
- Chop parsley and garlic. Remove rosemary and thyme from the stem.
- Add herbs to room temperature butter, add olive oil then mix to form a paste.
- Rub the paste onto the Tilapia on both sides.
- Bake Tilapia uncovered for 15 minutes, then broil on high for 10-15 minutes.
- Remove from oven and serve hot.
Salsa:
- Chop cilantro, bell peppers, tomato, and onion.
- Add red wine vinegar and salt to taste. Mix well.
- Serve room temperature or cold.
Mashed Potatoes:
- Boil the potatoes in salted water until tender (be sure to put a generous amount of salt). Drain.
- Add butter and mash while they are hot; it is a lot easier.
- Add heavy cream.
- Mash together well to desired consistency and taste.
