Garlic Butter Shrimp Rigatoni – A Quick & Easy Pasta Recipe

Description

This quick and easy garlic butter shrimp recipe is perfect for a weeknight meal! Made with juicy shrimp, sweet cherry tomatoes, garlic, and a luscious white wine butter sauce, it’s the perfect quick and easy dinner that tastes like a restaurant-quality meal.

Ingredients

  • 10 oz rigatoni pasta 
  • 10 jumbo shrimp, peeled and deveined 
  • 10 cherry tomatoes, halved 
  • 8 cloves garlic, minced 
  • ¼ onion, thinly sliced 
  • 3 tbsp unsalted butter 
  • 2 tbsp olive oil 
  • fresh parsley, chopped (for garnish) 
  • 1/3 cup pasta water (reserved) 
  • ½ cup dry white wine (like Sauvignon Blanc) 
  • ¼ tsp red pepper flakes 
  • ¼ tsp oregano  
  • ¼ tsp creole seasoning  
  • Salt & black pepper, to taste 

Instructions

Cook the Rigatoni 

  • Bring a large pot of salted water to a boil. 
  • Cook the rigatoni pasta until al dente, according to package instructions. 
  • Reserve 1/3 cup of pasta water, then drain and set aside. 

 Sauté the Shrimp 

  • Season shrimp with salt & black pepper. 
  • Heat 1 tbsp butter in a large skillet over medium-high heat and cook for 2 minutes per side. 
  • Remove from the skillet and set aside. 

Make the Garlic White Wine Sauce 

  • In the same pan, add another 1 tbsp of olive oil and 1 tbsp of butter. 
  • Sauté the cherry tomatoes, onions, garlic and pepper flakes for about 2-3 minutes until fragrant. 
  • Add Shrimp back into pan and pour in the white wine, scraping up any bits from the bottom of the pan. Season with oregano and creole seasoning. Let it simmer for 1-2 minutes.  

Toss Everything Together 

  • Add the cooked rigatoni and pasta water to the skillet, tossing to coat in the sauce. Mix well. 
  • Stir in 1 tbsp butter for extra richness and drizzle 1 tbsp of olive oil on top as well.  
  • Add salt and pepper to taste. 
  • Garnish with fresh chopped parsley.
