Truth be told when I eat vegetables, it must be packed with flavor and well-seasoned……just a personal preference. Bland tasteless vegetables are totally not my thing! Roasting your veggies adds so much flavor and a wonderful texture to them. This recipe takes only a few steps to make, and it is healthy as well. Add your protein (meat or fish) to this side-dish for a well-balanced diet.
I made these roasted vegetables for dinner alongside my oven baked garlic and herb chicken let me tell you it was a HIT! Everyone enjoyed it. It is perfect to add to your weeknight dinner spread.
The great thing about this recipe is that if you are making oven-baked chicken or fish you can place everything into the oven together and “chillax” until everything is done. Literally does not require much effort.
