Easy Shrimp Scampi Pasta

A traditional shrimp scampi is made with shrimp that is tossed into a rich garlic butter sauce with a hint of white wine. This amazing sauce can be served with any pasta of your choice such as angel hair or linguine for the perfect dinner. It is delicious and so easy to prepare in less than 30 minutes? Whip together this recipe for the family or just a dinner for two. I also love to add homemade garlic bread to my shrimp scampi with pasta for a full coarse meal.

The garlic, basil, parsley, and white wine adds so much amazing flavors to the sauce. Oh! and the lemon zest adds a nice fresh and tangy taste……because let us face it what is a shrimp scampi if it is not fresh!

To spice things up a bit add some pepper flakes in there…. Preparing this recipe will have you thinking you are in a fine Italian restaurant, but it is right in the comfort of your own home. Have all your ingredients ready and prepped as the process does go amazingly fast. Be sure to cook your shrimp just until it is a bit pink so you would not overcook it! Do enjoy 😊

Easy Shrimp Scampi w/ Pasta Recipe

Ingredients

  • ½ pound shrimp
  • ½ pound cooked, thin spaghetti (al dente)
  • ½ tsp red pepper flakes
  • ½ tsp black pepper
  • 5 cloves of garlic, grated
  • ½ cup cherry tomatoes
  • ½ of a small red onion, chopped
  • ¼ cup basil, chopped
  • ¼ cup fresh parsley, chopped
  • 2 tbsp olive oil
  • ½ tsp lemon zest
  • ¼ cup white wine
  • ½ cup of chicken broth (you can use any broth or stock you prefer)
  • 1 tsp creole seasoning
  • ½ tsp salt
  • 2 tbsp butter
  • ½ tsp garlic salt 

Instructions

  1. Clean shrimp and season with garlic salt and creole seasoning
  2. Place 1 tbsp of butter in a skillet on medium heat then sauté shrimp till it’s slightly pink (less than 2 minutes). Remove from skillet
  3. Place olive oil and remaining butter into the skillet. Add onions and garlic and sauté for 2 minutes. 
  4. Add wine, broth, cherry tomatoes and pepper flakes and bring to a simmer. Allow the liquid to reduce by about ¼.
  5. Add shrimp, basil, black pepper, lemon zest and salt. Reduce heat and allow to simmer for 2 minutes. 
  6. Add the cooked pasta and mix well.
  7. Garnish with fresh parsley.
