For the Chow Mein Sauce:

  • 3 tbsp soy sauce 
  • 1.5 tbsp oyster sauce 
  • 1 tbsp hoisin sauce 
  • 23 drops browning sauce (for color, alternative: ¼ tsp dark soy) 
  • 1 tsp sesame oil 
  • ¼ tsp five spice powder 
  • 2 tsp sugar 
  • 1 tbsp ginger, grated 
  • 1.5 tsp cornstarch 
  • 1/2 cup water

For the Chow Mein:

  • 12 oz chow mein noodles (or egg noodles) 
  • 1 tbsp vegetable oil 
  • 1 lb ground beef 
  • 6 cloves garlic, minced 
  • ½ large onion, thinly sliced 
  • 1 small carrot, julienned 
  • 3 baby bok choy, chopped 
  • ¼ red bell peppers, julienned  
  • 2 green onions, diced 
  • 1.5 tsp red pepper flakes (adjust based on preference of heat) 
  • ½ tsp onion powder 
  • ½ tsp garlic powder 
  • Salt and pepper to taste 

Instructions

Step 1: Cook the Chow Mein Noodles

  1. Boil the noodles according to the package instructions. Be careful not to overcook—they should be slightly firm (al dente). Rinse with cold water to stop the cooking process and toss with a bit of oil to prevent sticking. 

Step 2: Prepare the Sauce:  

  1. In a small bowl, whisk together soy sauce, oyster sauce, hoisin sauce, browning or dark soy sauce, ginger, five spice powder, sesame oil, sugar, cornstarch, and water. Set aside. 

Step 3: Cook the Ground Beef:

  1. Heat vegetable oil in a large skillet or wok over medium-high heat.
  2. Add the ground beef and season with garlic powder, onion powder, salt and pepper to taste.
  3. Cook until browned and fully cooked (about 5 minutes) then set aside.
  4. Do not drain as the juices from the ground beef will enhance the flavor of the chow mein.  

Step 4: Add Aromatics & Veggies: 

  1. Heat oil in a Wok or skillet over medium-high heat. Add the garlic, onions, carrots and bell peppers.
  2. Cook for 2 minutes until fragrant and the onion softens. 
  3. Add bok choy. Stir-fry for another 2-3 minutes until the vegetables are tender-crisp. 

Step 4: Combine & Serve: 

  1. Return the cooked noodles to the pan.
  2. Pour in the sauce and toss everything together until well coated.
  3. Add the cooked ground beef and pepper flakes.
  4. Mix up then add salt and pepper to taste.
  5. Cook for another minute, then serve immediately.
