Whether you’re marinating chicken, seafood, pork, or vegetables, this versatile green marinade infuses every dish with authentic Caribbean flavor. Quick to prepare in under 10 minutes, it’s perfect for meal prep and can be stored for future use.

Ingredients

  • 1 bunch parsley (approx. 90 g)
  • 1 bunch celery (approx. 250 g)
  • 10–15 sprigs thyme
  • 1 bunch scallions / green onions (150 g, about 8–10 stalks)
  • 1 large onion, peeled
  • 1 head garlic (about 10–12 cloves), peeled
  • 2 tbsp fresh ginger, chopped
  • 1–2 hot peppers
  • 1–2 tablespoons of water or white vinegar, only as needed to help the blender run
  • Optional: 1/2 tsp salt
  • **Note on Salt: If you choose to add salt to this green seasoning, keep in mind that you’ll want to use a bit less added salt later when seasoning your chicken or other proteins. This helps prevent over-salting while still building maximum flavor

Instructions

  1. 1Wash and roughly chop all ingredients into medium-sized pieces to make blending easier and more even.
  2. 2Add all ingredients to a blender or food processor, along with a very small amount of water or vinegar; just enough to help the blender start moving.
  3. 3If you’re using a small blender, blend the ingredients in two batches so everything processes smoothly.
  4. 4Pulse and blend for about 1–2 minutes, stopping to scrape down the sides of the blender or food processor as needed, until the mixture is fully combined and smooth with a slightly textured consistency.
  5. 5Transfer the blended green seasoning to a clean, airtight container with a lid and store until ready to use.
